Easy Vegan Sushi

Ingredients
- 1 cup Sushi Rice
- 2 tablespoons Sushi Vinegar
- 4 Nori Sheets
- Avocado
- Beetroot
- Water
Instructions
- In a pan add 1 cup of sushi rice and
1 cup of water. - Cook the rice per packet instructions.
- Place the rice in a bowl, add sushi vinegar, and mix.
- Place a portion of the rice into a nori sheet and spread over the rice (it's easier with wet hands).
- Add 2 slices of avocado and beetroot.
- Roll up the sushi nice and tight.
- Repeat sushi rolling with remaining rice.
- Cut into pieces.
- Serve and enjoy!
